we have two case
1-if you need to make the change once
you can change in the order itself in ( operation overview and component overview )
then release and save the order
2- if you need to make it permanent
go to t-code (CS02) and make a change to BOM, then go to t-code (CA02) and make the change in routine, then go to order change (CO02) and read PP master data, then release and save the order

With reference to Mohamed Ibrahim's answer, after changing the bom/routing, go to production order menu in change mode and choose "read pp master data" then only the new bom/routing will be updated.
