orifice is a hole ( of different size depending on the
application) it can reduce the quantity by increasing the
pressure and that pressure can be used to know the
flow/speed or as it is to get forced flow. etc in some
places it is used as a reducer or restricters.

Ex: If u put any orifice in high pressure line, upto
upstream of orifice pressure will be high i.e. there is a
obstuction to the flow, that is why pressure is increasing
and there is a minimum path to escape through the orifice
so that velocity of the fluid also less. At down stream of
orifice, there is lot of space for the fluid i.e. area
increased to flow but because of high pressure fluid
flowing through small area, velocity of the fluid will
become a Jet. But Quantity of the fluid will be less. If
you put two pressure gauges at u/s and d/s of orifice, u
can observe that higher value at u/s and lower value at
d/s. This means that, at d/s, due to there is no
obstruction, pressure will be less. That is why if u see
any hydraulic system, u can see no.of orifices, due to hyd.
system requires higher force with less Qty of oil
