for this i want to suggest you that first read and
understand piping and instrumentation drawing (P&ID )
symbols from a recognized book. Once you learn them you can
easily draw any instrumentaton and processing circuit.
Afew pages about P&ID symbols are available in "Curtis D.
Johnson" a book of pearson education.
I don't know much about data sheets, but the samples are
available on internet.
