Answer / karthick
if oil is mixed with water, oil will form a layer over the
surface of the water this is because the sp.gravity of oil
is lesser than water so it floats over the surface.this
resists the formation of steam to a large extent that is it
doesnot make evaporation of water instead foaming occurs

Oil when mixed with water- Emulsion takes place. When combustion of oil happens a micro-explosion takes place which atomizes the the water droplet. Thus, higher surface area created supports better heat transfer to the fluit in lesser time.
