Item catalog is a collection of items classified.
Example:-PC Purchasing Catalog, which contains all the
purchasable items that types of PC's
category is a logical classification of items that have
similar characteristics.
Example:-All laptop's and Keyboard's we can call Hardware
category.UNIX and DOS Operating System we cam call

Item Category defines the category of item in inventory.
Eg -
1) a transistor can be a part of product category
Electronic Material.
2) wheat grain can be part of product cateory Food item.
Item Catalog is used in iProcurement. Its a list of items
(may not belong to same class like Electonic material, Food
item). Same catalog can have both items in it (as per eg
above)

Item Master define the all basics of the Items in its filed, while the item catalog is the combination of the shared item in these basics

Item Category: Its a combination of Group, Country and Brand and it is assigned while creating Item Master//like for example..group may be Chicken...country may be Idia...and brand may be MKR..so now we know that this item chicken is from india and is manufactured by MKR this attribute is attacked to the Item Category
Item Catalog:Though widely not used in implementation this feature allows to group items on one type under one ,its like building a information catalog of items..for report purposes for the management....not much to say on this :)
