Buckolz Relay is connected between transformer tank and
conservator.It gives protection from mainly over
heating.The overheating can be done by any way-- by
sparking or by short circuit or by any internal fault.When
transformer oil overheated it decomposes itself and create
some hydrocarbon and produce hydrogen gas.. This light
weight hydrogen gas moves to the upward direction and trap
into the buckolz relay.After collecting a sufficient
ammount of gas the buckolz relay give a alarm signal and
trip the breaker to protect the transformer to getting
damaged from over heating.
We can collect the gas stored in the buckolz relay and can
analyse it to know the types of fault.In big transformer a
gas holder is connected to the buckolz relay to collect the
gas..

Buchholz Relay is a gas actuated relay installed in the oil
immersed transformer for the protection against all kind of
faults. It is used to give an alarm in case of slow
developing faults in the transformer and to disconnect the
transformer from the supply in the event of severe internal
faults, always used for transformer having rating exceeding
75 kVA.

I wish to add to TANGOS answer.When faults due to insulation breakdown,sparks within the windings or due to insulating oils
properties breakdown which may cause the developments of air within the transformer.This air bubble is used to activate the
BUCKHOLZ relay and trip off the transformer.

Before,in the case of internal fault. That means a operator can take the preventive means and he can operate,other wise it will trip automatically.
