it is the proximity and the stability of the residue of the denatured protein,steric hiderance and viscosity of the solvent which contributes to entropy change.
for example if glutamate and serine are place say 4 residue away then they likely to react in order to stabilize -ve charge of glutamate.
bulkyness will decide wheather 2 possible residue can react with eachother?
viscosity will determine the rate as it impose the friction to the motion of side chain.
