intimate mixing of water and air enhance heat and mass transfer (evaporation),which cools the water.the latent heat of evaporation is taken from water itself.

in a simple word cooling tower works like desirt cooler,in
cooling tower water spray form finns and comes in contact
with air through cooling tower fan then heat transformation
ocour due to this supply water loose there heat & water
temperature comes down but here is a limitation the cooling
tower water temperature never go dowen below wet bulb
temperature.

water is distributed in very fine droplets by nozzles spray on fills. when air comes in contact with these droplets small portion of it is also evaporated causing latent heat transfer, other then sensible heat transfer.

From the top of the cooling tower hot water falls in very
small drop let by spray and from the bottom of it cold air
flows.by mixing of hot drop let and cold air water get
satuarated and get condenced.
