AMYLOSE AND AMYLOPECTIN ARE TWO COMPONENTS.
amylose is soluble in water than amylopectin.
amylose soluble in water without swelling amylopectin swells
in water.
amylose does not forms gel where as amylopectin forms gel.
amylose produces blue colour with iodine amylopectin gives a
purplish colour with iodine.
