on hydrolysis sucrose yields a mixture of glucose and
fructose which is often called invert sugar.this mixture
reduces fehling's solution and other alkhalie reagents.The
name invert sugar is given to this mixture because the
levorotatory fructose thus produced changes the
dextrorotatory action of sucrose.
