1.No,We will not face any problem with multiple mail servers
in a same organisation.And maintaining multiple mail servers
in the organisation because of faulttalerance and to
minimize the Network Traffic.....consider if 1000 employees
r working ina organisation, each and everyone is having
respective mail ID,during the log on time all log on request
will be passed to one server,it might be cause some problems
while log on,so we need to maintain multiple mail servers.

2.Unattended is not a recommended one.
if an organisation is already having a mail server then we
will go for an unattended installation,to reduce the
installation time.benifit is only time consuming.
and need not run the forest prep in an second mail server.

In addition to previous answer, would like to mention:

Also not required to run Domain Prep if installing a new
exchange server in the same domain.
Its only required to run Domain Prep if installing a new
exchange server in some different domain in the same forest.
Rest all is perfect.
