The foods that build the body, have to be put to proper use
in the construction of the body. This work is regulated by
certain chemical substance known as vitamins. Thus vitamins
are organic compounds present in small quantities in food
and are essential for the regulation of life processes.
Vitamins are, therefore, very important for human body and
if they are absent, serious diseases may be caused.
Four distinct kinds of vitamins.
Vitamins, A,B,C and D- have been discovered. It has been
discovered that a particular kind of vitamin performs a
particular function in maintaining health. Thus, beri-beri
would certainly certainly afflict a person if he is
deficient in vitamin B. Let him live on a diet of milk,
eggs, wheat, maize, pulses and green leafy vegetables, and
he is sure to recover without any medicine.
Vitamin A is important to children since
it promotes growth, it builds up the living skin of the eye,
of the air-passages, and of the mouth and the throat, so as
to resist diseases. Early symptom of its deficiency is
night-blindness.
Vitamin B builds up good nerves, which
resist disorders. It is necessary at all ages and its
deficiency leads to diseases like beri-beri wherein a man
loses the control of his muscles and limbs. Vitamin B is
present in cereals and pulses, wheat, maize, green leafy
vegetables and eggs.
Vitamin C builds up strong blood
vessels. Its deficiency causes a disease known as
scurvy-bleeding of gums, loosening of teeth, weakness and
fatigue. Vitamin C is present in fish, citrus fruits and
green vegetables.
Vitamin C is formed in dals, gram and other cereal grains
when they are allowed to sprout.

Vitamin D regulates the building up of
bones and teeth. It is very important during periods of
one?s growth and women?s pregnancy. Its absence leads to a
disease known as rickets, which is common in children. Milk,
eggs, animals fats like butter or ghee and cod-liver oil
contain this vitamin in abundance.
Besides these four principal vitamins,
there are other vitamins E,K and P which have a minor effect
on the human body.
