why is a coin in a vessel not vissible when seen fromjust
below the edge of the vessel but can be viewed from the
same position when water is poured into the vessel ?

The water means that light is travelling into a more dense
medium, causing the light ray to bend away from the normal,
an effect due to being slowed down, meaning you can see the
coin which you otherwise couldn't see.
