the main principle of steam sterilizer(autoclave) is irreversible denaturation of enzyme and protein structure under high vacuum and high pressure.(when steam is saturated ,it has maximum capacity for condensing out,when saturated steam condense it gives the latent heat to the material on which it condense. the heat up of objects being sterilized at temperature of 115 to 135 degree Celsius,
the condensed water also assists in the sterilization process by hydrating the microorganisms present and allowing them to be easily killed.
