How we get DST moisture 15.4-16.0%. what is the calculation
or method behind it.

The molecular formula of Di sodium Tartrate dihydrate is
C4H4O6Na2·2H2O and mwt is 230.08gm
Hence, the participation of water in this mwt is 36gm and
rest of 230.08-36= 194.08 is DST wt:
So, the theoritical %water content is calculated as under:
36 x 100/230.08= 15.64%
The tolerance in water may be between 15.4 to 16.0%.
