Why are the several carbohydrate side chains attached to
hydrophilic rather than hydrophobic regions of the membrane
protein ?

Answer Posted / abhi

Carbohydrates acts as signalling molecules in cell. These
are bound by glycosidic bond to the membrane
protein(glycoproteins/proteoglycans) or lipid
molecules(glycolipids).

Carbohydrates choose hydrophilic amino acids of
transmembrane protein due to the fact that, they can easily
form glycosidic bonds with -OH group of hydrophilic aminoacids.
Whereas hydrophobic amino acids have complex structure with
usually no -OH groups for glycosidic bond formation.
