However, if we look at this on a molar basis:

(359 g/L)/(58.44 g/mol) = 6.14 moles/L
Sugar (sucrose): water solubility 2000 g/L)/
(2000 g/L)/(342.30 g/mol) = 5.84 moles/L
So on a molar basis, the solubilities are close and one might conclude that the apparent difference lies in the difference in molar masses.
