How system determines as special stock to normal stock in

Special stock is determined from Item category. For e.g. In Consignment process, while we issuing the stock to customer, it consider special stock as 'W' which determines from item category KEN.

Please do not attach much importance to theory and do concentrate more on Business Scenario where in the client was insisting on customized reports rather than Standard Pricing reports? Once the system determined the item level schedule line category automatically in the sales order, can you still change it manually?
