An Extract Structure in SAP BI defines the logical layout of data to be extracted from a source system, while a Datasource represents a physical connection or access point to a specific data source (e.g., database table, file, etc.). In other words, an extract structure outlines how data should look after extraction, and a datasource provides the means to extract that data.
