How to debug idoc manually? If I want to extend the standard idoc say matmas, where we have to write code for extension?

To debug IDOCs manually in SAP, you can use transaction WE20 or WE21. To extend the standard IDOC like MATMAS, you would need to write customizing code in SE37/SE38, and also create a corresponding enhancement for the IDOC using transaction OVCV.
