what is the difference between sinking and sourcing inputs
and also what are there applications?

main application of sink and source is to control of direct current flow in load.
DIfference b/w sink and source is
SINK MODE provide a path to 0V DC (-DC)
SOURCE MODE provide a path to +24V DC (+DC)
