You can prepare for SIP call flows and go through some of
the SIP messages , different call scenarios , SIP message
structure

There are no shortcuts, read RFC 3261 thoroughly and mug up
all scenarios of a SIP call, you should know all types of
methods and headers. Usage of Via header and branch
parameter. Why ACK and its significance. Dialog vs
Transaction vs Session. How to modify a dialog? When does
media starts flowing in a SIP call? What will happen if ACK
is lost? How a SIP gateway interacts with SS7 signaling and
give its flow end to end. Hope this helps.

Go through the RFC 3665 which will be having basic call flows.
And google sip srchitecture,explanation about each device in
the architecture like proxy,registrar server etc.different
call features call flows like call hold etc.What is the
difference between normal invite and invite with hold and
unhold?etc
differences between sip transaction,caller-id,dialog etc?

I agree it is difficult to find exact answers when it comes to SIP and everybody has to go through the RFCs. Some nice interview questions are available on www.code2compile.com its a newbie site but has some good topics related to SIP. I guess it might be of some help.

I would expand the list of these interview questions with
one more: what is SIP server?
A SIP server can build up calls, and also terminate them.
You can create SIP accounts on a SIP server if you want to
add a certain phone for example (e.g VoIP phone) to a
telephone system.
