Date functions in SQL are used to manipulate date and time values. Examples include TO_DATE(string, format) for converting a string to a date, SYSDATE for getting the current system date and time, ADD_MONTHS(date, number) for adding a specified number of months to a date, and EXTRACT(field FROM date) for extracting a specific field from a date (such as YEAR or MONTH).
