Is one elastic ip address enough for each instance that I actually have running?

No, if you have multiple Amazon EC2 instances, you will need to associate an Elastic IP address with each instance that you want to allow inbound traffic from the internet. One Elastic IP address can be associated with multiple instances, but if you want each instance to have a unique public IP address, you will need to allocate additional Elastic IP addresses.
