Roller is used at one end of long bridges. As it provides for lateral movement, thermal expansion and contraction will be facilitated. Usually, roller supports are rarely used as it would be akin to putting the member on roller skates. Some other support is needed to resist lateral load.
Coming to hinges.. knee or a door is an example of hinge.. They can rotate only in one direction and provide resistance to lateral movement.. However, because of their rotation, they do not make a structure stable and hence rarely used. They are however used as connections in trusses.
