Because Opamp has two inputs while only one output.

op amp is selected triangular in shape because it has two 
terminals as inverting and noninverting and having only one 
output common for both the terminal.if in case we also 
provide an feedback if nessesary.if it is selected as any 
other shape,it is not possible.

nothing fancy there,just to show that it will unidirectional
gain.infact there are fully differential opamps(which can
have 2i/p and 2o/p),for this also triangler.

The tapering edge of the triangle shows the direction of the
current flow in the Op-Amp.
